I'm in the process of building a new server!!! Just got the last part this week. Been buying over the past month when a good deal was found.
My plan is to run Windows 2008 with Hyper-v and move this physical to a VM and run a few other VM's as test beds. My long term goal is to create a new 2008VM and move the site to that.
Quad core 9550(2.8ghz 12MB)
10GB ram
1TB drive for the OS(s)
2TB drive for files. Both will be mirrored so 4total.

Phase 1:
A:Create a secondary backup of the 2003 server in case I need to revert to backup, and the nightly backup's fail.

B:Remove physical parts in current server and build a temporally home for "old server" to allow build of new server. Run new Cat5 to temp location.
